Haxial TextEdit is a fast and free text editor that edits plain text files. It can edit text files in Mac, DOS/Windows, and Unix formats.
It also includes a Find/Replace function, and a menu for quick access to your favorite documents. It can also count the number of occurrences of a piece of text in a file, and alphabetically sort lines of text.
It includes a "Favorites" menu allows quick access to your favorite documents. It can scroll through large files very quickly.
Enhancements:

Plain Clip 2.1 has very high efficiency and speed to remove formatting from text which is on the clipboard. It's designed as a faceless application (no GUI), which makes it ideal for triggering it from a hotkey application such as "Spark" or "iKey".

Line End Changer changes Macintosh style line endings (carriage return, ASCII 13) to Unix style line endings (line feed, ASCII 10) in a plain text file.

As written, it is set up to do the conversion for Web Star log files, but can be easily modified to handle any plain text file you want to convert.

StyledTextToRecord is an AppleScript that enables you to convert styled text to a record and viceversa.

This is a compiled AppleScript, a handler (or framework, if you prefer so) called "StyledTextToRecord" which will accept styled text as input and will return as output a record containing pertinent info about bolds, colors, font sizes, etc. of such text.

It also provides a handler for the reverse function called "RecordToStyledText". It accepts as input a record formated as returned by "StyledTextToRecord".
There are included two little samples. The first one will convert styled text to basic HTML. The second one will convert styled text to plain text, except for bolds.

“Pdftotext” is a shell program for converting PDF (Portable Document Format / Adobe Acrobat) documents into plain text. It is Open Source Software written by Glyph & Cog, LLC; this implies I only compiled it and built this installer package, but Im not the author of this software.

This installer will install nothing but a “pdftotext” binary and its manpage, compiled from the unmodified sources. Originally, “pdftotext” is part of the “Xpdf” software, which is a viewer for PDF documents. As I only needed the converter and not the viewer itself, this package does not contain anything except “pdftotext”. (Besides the fact that a full “Xpdf” installation requires the X window system.)

A story is read from beginning to end when you click on a title. Two stories are built-in and it is easy to add stories. The large buttons, large fonts and easy operation make it child’s play.

To add to the stories in the StoryTime Bookcase, open Manage Stories from the menu bar and enter text into the Text Field a number of ways:

• a. Type into the Text Field.
• b. Select a source folder using the radio buttons (Mac version only), click on the "Load File" button to navigate to a plain text file and click on OK.
• c. Paste text into the Text Field. This text could have been copied from a web page. (The menu bar has a link to a free internet site with thousands of free eBooks. You can find a story, copy the story from the web page, paste the story into the Text Field and edit as necessary.)

When you are ready to save the story, click the "Save File" button. You will be prompted for a story name (no suffix should be used - the ".txt" suffix is added automatically).

As noted on the Manage Stories window, words in capital letters will be spelled out; change such words to uppercase and lower case letters (Mac version only).
